Nose
A dark rich Cabernet packed with aromas of candied cherry, plum, cassis, and pomegranate. The aromas marry with a powerful spiced oak bouquet of sweet vanilla caramel, pine, rosemary and anise.
Palate
Big round tannin and bright cherry and berry flavors lead to a long sweet finish.
Growing Conditions
Block 7 is the oldest of the Entav clone plantings at B.R. Cohn in the late 90's. It sits at the top of our Fox Hill, below Sonoma Mountain and has very good drainage, reliable breezes off the mountain, and sparse rocky soil. These conditions produce enough stress to keep yields low, and berries small and concentrated.
Food Pairing
Good with grilled rosemary/tarragon chicken, pepper crusted New York steak, short ribs with spicy plum sauce, or grilled port chops and caramelized apple demi-glace. Also pairs well with spicy Italian food. For dessert, dark chocolate or rich chocolate mousse or favorite cigar.
