Whole cluster pressed into settling tank for 24 hours of clarification, then racked to barrels and tanks for long, slow, native ferment. malolactic fermentation complete.
Aging
Aged for 16 months in 41% new hungarian oak foudre, 32% used 320 and 500l barrels and 27% concrete tank.
