Bottled unfined and unfiltered on April 22, 2009.
Winemaking
The clusters were hand-sorted, de-stemmed and the berries were hand-sorted again. After four to five days of
cold maceration, the fruit began 100% native wild yeast fermentation in small open-top fermenters before
being gently pressed and moved to barrel where it finished fermenting.
Aging
The wine aged in 75% new French oak
barrels for eighteen months.
