Growing Conditions
The 2015 Amici Cellars Spring Mountain Cabernet Sauvignon is a fresh, elegant expression of its famous appellation. The Spring Mountain Vineyard sits on the eastern side of the Mayacamas at 1500 feet in elevation. The combination of morning sun and cool evenings allow the grapes to ripen slowly and evenly. This produces an elegant, balanced wine with Spring Mountain’s signature dark red fruit and graceful tannins.
2015 was a stellar vintage for Napa winemaking. A cool spring meant smaller grape clusters and resulted in lower yields than usual, while the quality of fruit was exceptional. Warm summer weather brought grapes to optimum ripeness before one of the earliest harvests in memory. The resulting wines show intense aromatics and complex fruit character.
Winemaking
A true Spring Mountain classic with crushed rock, peat and sweet vanilla smoke that give way to dark fruit and savory herbs. Tellicherry peppercorns with rich cassis, currant, black olive and dark cherry juice. The wine is framed with herbal and savory notes giving way to a long finish. Strong refreshing mountain tannins show the true pleasure and ageability of this wine.
Aging
95% stainless steel and 5% barrel fermentation. Aged 22 months in 100% new French oak barrels
