Palate
Aromas of black cherry, toffee, and cocoa beans carry the
flavors of blueberries and cherry cola. A hint of vanilla wafer
smooths out to a long mocha finish.
Winemaking
Great Port-style wine is a result of the marriage of high quality grape brandy with luscious and aromatic wine. Our Red Port style wine production begins with the production of grape brandy. In the spring we evaluate our Syrah barrels from the previous vintage and determine if any are destined for brandy distillation for our red port program. If we have any perfect barrels they are sent to the distillery to become the brandy. Then it is time to focus on the harvest of our Syrah grapes.
These grapes are harvested at approximately 30 Brix, pressed, and fermented cold and slow to preserve aromatics. When the appropriate amount of sugar has been converted to alcohol we stop fermentation with the addition of our grape spirits made the previous spring.
Aging
Aged in French oak barrels for 3 to 4 years before it is bottled and released.
