Palate
The wine is ripe and creamy with layers of pear, citrus, nutmeg and mineral flavors finishing with a nice touch of toasty French oak. The wine is well balanced between fruit, oak and acidity and has a long generous finish.
Growing Conditions
The high 1400+ foot elevations of the vineyards along with soils that are lean, calcareous rock creates the ideal conditions for producing low yield vines. The warm summer days of Paso Robles, along with the afternoon cooling effect of the nearby Pacific Ocean allow for a longer growing season and add intensity and concentration to the fruit. Viticulture practices includes sustainable farming techniques and a hands on approach to the vineyards to assure overall balance in the vines!
Winemaking
Dunning Vineyards traditional winemaking includes using small lot fermentation, gentle handle punching of the red "must" and barrel fermentation of the whites both using French oak barrels. “Our focus is to produce wines that express the flavors of the vineyards, the terroir”, says Winemaker Bob Dunning. These techniques result in wines that are incredibly rich, concentrated and elegant!.
