Winemaking

The Grenache Blanc was immediately pressed and settled before being transferred to ferment with native yeast in stainless steel tanks. Malolactic fermentation was arrested post fermentation to preserve brightness and acidity. The Cinsaut portion of this wine was fermented in stainless steel tanks with native yeast via carbonic maceration for one week before being pressed. The wine was then settled and finished fermentation before being racked to stainless steel to age.
