Nose

It carries a delicate nose of juicy red apple with a hint of ginger.

Palate

The Pinot Noir lends ripe, red fruit flavors at mid-palate while the Chardonnay adds complexity with lemon zest and red grapefruit on the elongated finish.

Growing Conditions

The 2013 growing season began with an early spring that was warm and dry. This beautiful weather continued on through bloom; fruit set was excellent and the vines set a high number of heavy grape clusters. Without any heat spikes or significant rain, all of the fruit was picked at optimal maturity and it came to the winery in excellent condition to produce this outstanding wine.

Winemaking

Grapes are handpicked & transported to the winery in small bins where they are gently whole-cluster pressed to retain the delicate vibrancy and freshness. Only the first press, with the most delicate flavors and aromas, is used for this wine that is fermented in stainless steel tanks at 55-60° F. After 6 months of first fermentation, the winemaking team assembles the final blend from 17 wines, hand selected from our best press fraction (or cuvée).

Aging

Over 5 years en tirage and a minimum of six months on the cork.

Appearance

At first pour you’ll notice that this is not your typical sparkling Rose. With a pale, red-gold color.

Food Pairing

Citrus flavors of blood orange and red ruby grapefruit on the front palate with a delicate elongated rich finish compliment a variety of dishes. Try with grilled halibut skewers with citrus compote or butter lettuce salad with red grapefruit segments, avocado and dried cranberries. For the other courses try buttery Meyer lemon shortbread with fresh raspberries. The mild tang of aged goat Gouda or Manchego cheese, effortlessly compliments the long creamy finish of this unique cuvée.
