Palate
Aromas of green apple and pear open on the mouth to peach and clementine with a touch of honey. The generous mouthfeel continues into the long finish with a lingering hint of citrus.
Growing Conditions
The 2014 growing season got off to an early start with budbreak about two weeks earlier than average. A late winter weather system brought in enough rain to supply the vines through bloom, and mild warm spring weather gave us good fruit set. The early spring brought on an early harvest with average size yields of excellent fruit. This is looking to be an outstanding vintage.
Winemaking
Grapes are handpicked and transported to the winery in small bins where they are gently whole-cluster pressed to retain the delicate vibrancy and freshness. This wine is fermented in stainless steel tanks at 55-60°F to retain vibrancy and freshness. The winemaking team assembles the final blend from 10 base wines.
Aging
The wine is then bottled and aged sur-lie in our caves for 22 months before disgorging.

The vivid acidity and stone fruit rich flavors of this unique cuvée, compliments a variety of dishes from sweet to savory. Try with grilled fish tacos with peach jalapeno salsa and avocado or chipotle rubbed barbequed chicken. Peach on the palette combined with brilliant acid, pair well with Meyer lemon cheesecake or peach pudding cake with ginger crème fraiche. Also compliments a wide selection of soft cheeses akin to camembert or La Tur.
