The Campbell vineyard is located in the small town of Knightsen. Vines were planted 15 years ago on wires where they are drip irrigated. Warm temperatures and fertile soils produce flavorful grapes.
Jacuzzi Family Vineyards’ Cabernet Sauvignon was handpicked and de-stemmed - with minimal crushing. The must was then pumped to a temperature controlled stainless steel fermenting tank and inoculated with a pure strain of wine yeast to ensure a complete and healthy fermentation. Grapes were pressed and the wine was moved to a settling tank.
A combination of 45% new French oak and neutral cooperage for 10 months.
Pair with a grilled steak or pepper-crusted Salmon.
