Palate
Jacuzzi Family Vineyards’ Dolcetto is dark, complex and rich with aromas and flavors of vanilla, blackberries, plums and chocolate.
Growing Conditions
Dolcetto is the principal grape grown in the Piemonte region of Italy and roughly translates into “little sweet one” even though the wine is usually made in a dry style. Our Dolcetto comes from two Sonoma county vineyards; a well drained hillside vineyard (elevation 1,100 feet) in Knights Valley (7%) and a Bennet Valley (93%) vineyard located at the base of three mountains.
Winemaking
Grapes are de-stemmed with minimal crushing. Must is pumped to a temperature controlled stainless steel tank and inoculated with a pure strain of wine yeast to ensure complete and healthy fermentation. Grapes are pressed and the juice is moved to a settling tank. Within a few days, 35% of the wine is racked and moved onto new French oak for twelve months with the balance remaining in neutral cooperage. The wine is racked once more during the aging process and then moved to a tank for bottling.
Aging
New French oak for 12 months.

Try it with a tomato caprese salad, grilled Portobello mushrooms or spaghetti with a rich tomato sauce.
