Palate
The 2015 Giuseppina has enticing aromas of melon, pineapple and kiwi with butterscotch, and hints of sweet caramel on the palate. It has a smooth texture that persists for a long time allowing the vibrant fruit flavors to shine though.
Growing Conditions
The Chardonnay grapes for our Giuseppina come from our winery estate in Sonoma-Carneros. This is ideal growing conditions for Chardonnay as the cool marine winds from both the Pacific Ocean and San Pablo Bay temper the summer heat. This extends the growing season enabling our grapes to slowly reach full maturity whilst retaining fresh fruit flavors and vibrant acidity.
Winemaking
Grapes were hand-picked, gently de-stemmed, and then transferred directly to our press where the juice was slowly and gently extracted. The juice was pumped to a settling tank where it was cooled to 55 degrees F and then racked to a fermenting tank. A single strain of wine yeast was added and fermentation temperature was held at 55 degrees to retain the fresh fruit aromas.
Aging
Once fermentation was complete, the wine was racked to 50% new French medium toasted oak for 6 months of aging.
Food Pairing
Enjoy this wine slightly chilled as an aperitif, or as an accompaniment to chicken with tarragon cream sauce, grilles salmon, or Gruyère cheese.
