Nose

Wonderfully complex aromas of white peach, Pippin apples and lime combine with notes of vanilla and hazelnut.

Palate

The mouthfeel is rich and broad with lively acidity and a lingering finish.

Growing Conditions

The vineyard’s terroir is very cool due to its close proximity to the ocean and the sandy-loam soil is well drained, providing perfect growing conditions for superior Chardonnay. This ranch has a long history of producing some of our best Chardonnay.

Winemaking

The grapes were harvested on September 21st. The fruit was harvested at night by hand, allowing us to gently process the clusters. At the winery the fruit was whole cluster pressed to protect the crisp flavors of the Chardonnay grapes, and the juice was settled in stainless steel tanks before being placed in French oak barrels for fermentation. The wine was bottled after 7 months of sur lie aging where the yeast lees were stirred weekly to enhance the body, resulting in a wonderfully complex wine.

Our 2015 Green Valley Chardonnay is an excellent match with rich-like dishes such as, Oysters Rockefeller, Butternut Squash Risotto, or Chicken, Sausage and Shrimp Gumbo with Rice.
