Palate
This Cabernet is a balanced and superb wine. It has the full spectrum of black fruit on the nose and palate, with plenty of dark chocolate and toasted vanilla on the finish.
Growing Conditions
It is made from 100% estate grown fruit from vineyards planted by the Wulffs' home on Atlas Peak in the Napa Valley. These rocky hillside vineyards of volcanic soil sit 1350 feet above the valley floor. They are close row planted, which requires that the vines be completely hand tended--no tractors. Since the roots struggle with the rocky soil as well as their proximity to other vines, they produce a smaller yield but wonderfully concentrated, earthy flavors. Since 2010 was a shorter growing season with unseasonably early rains in October, the alcohol levels are at a low 13.2%, without sacrificing flavor or depth, so you can enjoy it more generously.
Aging
2 years in French oak barrels,--- roughly 2/3's new--and another 32 months of aging in the bottle.
Food Pairing
Not a heavy Cabernet, this wine will pair very well not only with beef but also lamb, pork, pasta and even spiced poultry.
