Nose
Beautiful aromas of lemon custard, baked apple, white plum, and bitter
orange with oak tones of vanilla, nutmeg, hazelnuts and roasted almonds.
Palate
It has a very crisp and refreshing acidity, with a round, supple mouth feel
that lingers to a very long and powerful finish.
Growing Conditions
This very limited edition of 2004 Blanc de Blancs Oak Reserve was
crafted for sparkling wine aficionados who like a lot of power and
depth in their wines.
2004 was one of the best vintages in Mumm Napa’s history. With a very
early bud break during an unusually warm month of March, our vineyard
crews feared frost damage for weeks, but Mother Nature cooperated with
mild weather during the entire growing season.
Winemaking
The 2004 Blanc de Blancs Oak Reserve is a bold attempt to create a
Chardonnay sparkling wine aged for 6 months in 100% old French Oak
barrels (3 to 8 years old) before the secondary bottle fermentation. A first
batch of this wine was originally disgorged after 3 years of yeast aging, and
this new release has been kept for over 10 years on the yeast after
secondary bottle fermentation, and disgorged as an Extra-Brut style with
only 0.3% of residual sugar.
Food Pairing
A wonderful companion to densely flavored dishes, such as game poultry,
spicy risotto, or rack of lamb. Try it also with a baked brie with fresh apricot
coulis, or any cheese with fig and quince paste and roasted cashew nuts.
