Nose
Rich red fruit notes of ripe raspberry, sweet red plum and candied
cherry abound as the nose opens, also revealing touches of pie
crust and brown butter.
Palate
An equally enticing palate follows, rushing with cassis and dried
red cherry fruits, balanced by sweet vanilla, cinnamon toast and cedar, and finishing
smoothly with fine, earthy tannins and a hint of creamy cocoa.
Growing Conditions
With steadily mild temperatures throughout the
growing season, the 2009 vintage progressed very smoothly and the clusters ripened
evenly.
Harvest
The berries were harvested late September through October and underwent our
rigorous sorting process before crush.
Bottling
Bottling in May
2011.
Aging
After fermentation was completed, the wine was
transferred to 60% new French oak barrels for 18 months of aging.
Appearance
A deep ruby wine.
Food Pairing
With its striking depth and complexity, this wine would provide an excellent
foil to a rich meal like stuffed veal with arugula salad. For a beautiful cheese course, this
wine would pair perfectly with Toma, a sweet, semi-firm cow’s milk cheese from Italy
