Palate
This wine is a delight to taste; simultaneously luscious and delicate, displaying classic flavors of pineapple, green apple and melon, with a nearly imperceptible kiss of French oak and a burst of bright acidity.
Growing Conditions
Our Vintner Select Chardonnay has been undergoing a steady evolution over the past few vintages. With the 2009 offering, the wine is more elegant and restrained, while still remaining a classic representation of the Spring Mountain terroir in which these grapes ripened.
Bottling
Bottled: June 2010.
Winemaking
Fermentation was in 25% new and 75% neutral French oak barrels. Malolactic fermentation was initiated and then arrested at approximately 50% completion to maintain the natural grape acidity necessary to balance the wine's opulent fruit.
Aging
Lees stirring was done weekly from December through May to enhance the roundness and structure.
Cooperage: 25% New French Oak, 75% Neutral French Oak.
