Nose
Bursting with dark cherry aromas with underlying tones of forest floor and wet earth.
Palate
On the palate this wine shows plenty of structure, with dark cherry, strawberry and slight toasted oak flavors. The tannins are supple and balanced with a crisp acidity to drive the finish.
Growing Conditions
The 2017 growing season started with heavy rainfall, making it one of the wettest years on record. This lead to vigorous canopy growth, and an early bud-break in mid-March. Summer began with moderate temperatures in June & July, followed by sporadic heat spikes throughout the season. The sugar levels continued to increase with the heat spikes but then fell back down as the weather cooled, making the harvest season a game of start-and stop. The grapes rapidly developed beautiful ripe flavors with balanced acidity.
Winemaking
Our 2017 vintage Pinot Noir is comprised of the Pommard clone and clone 777, hand-picked on the 3rd of September. At the winery 100% of the grapes were gently destemmed into stainless-steel open-top fermentation tanks, and given a three day cold soak prior to fermentation. The wine was carefully punched down twice each day during the fourteen-day fermentation period, and then we gently pressed the wine from the skins and sent the wine to barrel. Malolactic fermentation naturally occurred in barrel and the wine underwent nine months maturation time in 40% new French oak barrels. Élevage happened in our caves over 9 months after which they were blended and lightly filtered before bottling.
