Winemaking
Our Willow’s Cuvee is a gorgeous GSM blend. The Syrah, Mataro, and Tempranillo were co-fermented with 100% stem inclusion on the Syrah.
Six months after fermentation all varietals are blended together and barreled back down for the remaining 15 months.
Aging
The Grenache was fermented separately aged in neutral French to preserve the luscious red berry.
- 65% new French oak for 15 months.
Appearance
Ruby in color.
Food Pairing
Pairs wonderfully with a nicely seasoned ribeye or garlic and herb roasted lamb chops.
