Union Sacré is an homage to Alsace, France and beauty’s odd ability to build unexpected bridges. These wines are made for the tables of friends, by two friends, from different continents, Xavier and Philip, who arrived at the Central Coast from opposite ends of the Earth.
Production: Straight to press. 4 hour press with light pressure cycle. Unfiltered. Unfined.
On fermentation: Fermented on thin lees for 3 weeks at 55oF . 50% fermented in wood tank.
Aging
Aged in 500 Liters neutral wood Puncheons.
