Nose
The 2012 Réserve Spéciale Cabernet Sauvignon opens with deep, layered notes of dried plums and dark cherry liquor, perfumed by aromatic sandalwood.
Palate
This wine has impressive frame with persistent and lingering tannin. This wine can be enjoyed today or aged upward of 20 years.
Growing Conditions
Arrowood’s signature blend is sourced from the finest blocks of Cabernet Sauvignon from various vineyards in Sonoma County. The majority of the fruit came from the Sonoma Valley AVA, where low-yielding, rocky growing sites bring balance and elegance. Smaller percentages of fruit come from the Knights Valley AVA and offer darker aromatics and fuller tannin profile, ideal for aging.
Winemaking
Fermented in Stainless Steel, 100% ML.
Aging
Aged for 32 months in predominately French oak, and some American oak (30% new barrels, 70% seasoned). The best Cabernet lots of the vintage were barrel selected, blended and returned to original barrels for an additional 6 months of aging.
