Nose

Aromas of fresh vanilla, lush dark fruit and dense black currants.

Palate

Bright cherry notes mingle with warm toasted toffee and sweet oak.

Growing Conditions

The 2021 growing season was very typical through early spring with warm days and cool nights. Early summer through harvest gave us some unexpected heatwaves but plenty of marine breezes and mild weather prevailed. The result was a slight delay of harvest while we waited for acidity, pH and brix to balance creating mature flavors.

Winemaking

Our Cabernet Sauvignon is harvested and fermented individually by vineyard lots and then barreled into a combination of French and American oak barrels, 10% of which are new.

Aging

The wine is racked twice during barrel-aging and gently filtered just prior to bottling. The 2021 Liberty School Cabernet was aged for 16 months in oak, blended in winter of 2022, and then bottled.
