The fruit loves the warm days and cool nights that run through the growing season. Our Cabernet Sauvignon is packed with black fruit and raspberry flavors framed by mocha nuances from both American and French oak. This broad-shouldered Cabernet Sauvignon is ready to drink now, but also has formidable aging potential.

This Merlot is sourced from our Estate certified organic vineyards that are nestled in the Templeton Gap and Paso Robles Estrella District of the Paso Robles AVA. Merlot is one of the main Bordeaux varieties and grows well in Paso Robles. This wine is pleasantly softer with depth and elegance. The fruit has dark berry and cola nuances, the vanilla oak is moderate, and the tannins are soft but offers a full body mouthfeel.

Sourced from our organically certified Zinfandel vineyards, these grapes get a lot of sunshine for full ripening and flavor development. Some Petite Sirah is incorporated into this wine to offer more structure. This Zinfandel has a full, yet round mid-palate with a pleasant lingering finish. Flavors of plum, blackberry, and spice with soft tannins.
Moscato is truly a grape where the fresh aromas are just as intense and flowery in the wine as the grapes! Drink this chilled as an aperitif or enjoy its freshness with fruit desserts or your favorite spicy foods..

Trentanove means thirty-nine in Italian and this reserve red blend celebrates thirty-nine years of Dam Fine Wine! Starting on the 10th anniversary, a tribute wine has been created every year, blending the best barrels of distinctive varietal lots together from a single vintage, to make a compelling blend. The goal is not to make a big tannic wine, nor one with long oak aging, but rather one that has "bright" flavors with sufficient depth and complexity. A wine that can stand alone or as a complement to food. Drink now and hold onto some to compare each vintage with friends.

Balena is a delicate, aromatic blend of Viognier, Sauvignon Blanc, Falanghina and Grenache Blanc. Balena is Italian for whale, and this blend is a nod to our organically certified Whale Rock Vineyard, in which much of the grapes are grown. Our Whale Rock Vineyard is named for this exact reason, it is studded with ancient whale fossils that date back millions of years. The 2022 Balena is pleasantly aromatic, crisp, and refreshing.

Barbera is an Italian varietal grown mostly in Piedmont and the southwest area of Lombardy, where it accounts for nearly 50% of the plantings. Half of our Barbera grapes are planted on a steep south-facing slope while the balance is near a creek running through the vineyard. Barbera is known for its full body, low tannins, and high acidity levels.

Cabernet Dorsa is a native grape of Germany and a rare find in America. This wine was grown on the hilltop of our Blind Faith Estate Vineyard in Paso Robles. Cabernet Dorsa is a cross of Cabernet Sauvignon and Dornfelder. It has a slight bell pepper character that Cabernet Sauvignon has, but it is darker in color and usually has more tannin structure.

Malbec is one of the six red varieties of Bordeaux wines, the most planted grape in Argentina, and widely used in Cahors, France for blending. Our Malbec is grown in our Hog Canyon and Stones Throw Estate Vineyards, within the Estrella District sub-AVA, where it does exceptionally well! We get color depth, a richness in the mid-palate, and a ton of fruit aromas and flavors. Enjoy it now but the wine will age superbly for five to ten years too.

This big wine brings together flavors that define Paso Robles. This 'Paso' Fusion blend made with Barbera, Merlot, Syrah, Tannat, Petite Sirah and Malbec offers fruit and spice with the perfect amount of tannins to coat your palate.

Our Whale Rock Vineyard is CCOF certified organic and located on the west side of Paso Robles in the Templeton Gap District. This vineyard produces a well-rounded Pinot Noir as the cool air at night aids to retain the acidity while the warm days develop flavors in the berries. The Pinot Noir clusters are tiny with small berries which help in creating the fruit intensity of the delicate wine.

Our Whale Rock Vineyard is CCOF Certified Organic and located on the westside of Paso Robles in the Templeton Gap District. Look for dark fruit, currants, plumbs and toasted oak on the nose with a finish of dark chocolate and plum. This versatile wine will age gracefully and pairs well with anything from appetizers to heavy pasta dishes.

Balanced and varietally correct, this Cabernet Sauvignon expresses the bold and ripe notes that a Paso Robles Cabernet should. This Cabernet Sauvignon is from our CCOF-Certified organic Whale Rock Vineyard that is nestled on the west side of the Paso Robles AVA. It is a broad-shouldered wine, but the tannins are tamed and elegant. This wine pairs great with barbequed burgers, roasted or grilled lamb, beef short ribs and other braised beef dishes. This wine is inspired by the desire to create a white wine that blends various exceptional lots of Chardonnay and Viognier into an exquisite wine experience. The wines had to work together perfectly for this synergy. Much like the dance, Tango, one misstep and it is clumsy, but as you will see, when done flawlessly the results are amazing. Each component adds special nuances to the aroma, flavor, and balance of the wine

There are six acres of Carignane in our organically grown Whale Rock Vineyard located in the Templeton Gap AVA of Paso Robles. One of the most planted grapes in France, it's used extensively for blending because of the natural acidity, bright fruit flavors, and fullness of the mouthfeel. This variety is one of our last to be picked as it slowly ripens with the Templeton Gap influence. The natural acidity and supple tannins make this a great wine to enjoy with a meal and it ages very gracefully.

Originating form Southern France, Tannat is known for its deep color and powerful tannins. Ours grows on the hilltop of our CCOF & SIP Certified Blind Faith Estate Vineyard and produces an robust yet elegant wine of dark fruits, great structure and bit of spice. Drink now with your favorite cut of meat or lay down to allow the tannins to soften. A cellar worthy wine!

Our Charbono is made with organic grapes from our CCOF certified organic Whale Rock Vineyard located in the Templeton Gap of Paso Robles. Typically one of the last grapes to be harvested, the long hang time allows the flavors to fully mature and create an exceptional wine reminiscent of the great Italian vintages. It displays black cherry, spice, plum and toasted oak. There are flavors of blueberry, plum, black cherry with soft tannins and a lengthy finish. A treat and unique wine for any cellar!

This Reserve Chardonnay is from our CCOF-Certified organic Whale Rock Vineyard that is nestled on the west side of the Paso Robles AVA that offers cool ocean air influences. Cool fermented and aged in both French and American oak, this Chardonnay offers some oak sweetness with balanced, yet soft, fruit notes. This wine is always a treat with rich seafood and creamed decadent soups. Serve slightly chilled.

This Tempranillo is grown on the westside in our organically certified Whale Rock Vineyard in the Templeton Gap AVA. Normally an earlier ripening full bodied wine, the grape thrives in warm to hot days and cool nights. Its name is the diminutive of the Spanish ‘temprano’, a reference to the fact that it ripens weeks earlier than most Spanish grapes. A variety that makes a compelling wine.

The story of this wine is intertwined with the story of Castoro Cellars. As we all know Castoro is italian for "beaver'. So what do we make? The answer is: dam fine wine. When, over a decade ago, we wished to put together a red blend that captured the essence of our vineyards, a sense of place and the enjoyable wines those vineyards produce, the obvious name was Dam Fine Red Wine. There is no template or recipe for this blend. Rather it is a result of trial and error using the most compelling wines of the vintage.

The East Meets West wine is our way of showcasing how well fruit from the east and west side play together. Every year we choose lots from both sides that really complement each other to make a great final blend.

The 2021 Viognier is Estate Grown in our CCOF Organic Certified Dos Viñas Vineyard on the eastside of Paso Robles. Viognier is a great alternative to Chardonnay; it is full-bodied and displays tropical fruit aromas and flavors. This Viognier would be great to enjoy with your favorite poultry or fish plate along with roasted vegetables. The trick to pairing food with Viognier is to fully respect its delicate floral notes and medium acidity.

The 2022 Albariño is from our organically certified Double Black Vineyard in Paso Robles. This wine brings minerality, acidity, and tropical fruit characteristics. True to its Northern Spanish heritage, this wine is delicate, but robust. Sedici means sixteen in Italian, and this is our 16th version of our reserve Bordeaux based blend. We select the star lots from that harvest, blend them together, and then put it to bed in our best barrels from a variety of forests and coopers to optimize the complexity. This exclusive wine is produced in extremely limited quantities when a vintage warrants the Due Mila signature. A cellar-worthy wine.

This favorite southern Rhône grape is made from our organically certified Whale Rock Vineyard in the Templeton Gap District of Paso Robles. Our Grenache is like the Spanish style, Garnacha; enjoy notes of ground cinnamon, raspberry and cranberry with firm acidity and lush tannins.

We invite you to celebrate life with this Blanc de Blanc sparkling wine made traditionally from start to finish in the Méthode Champenoise fashion. Secondary fermentation in the bottle and 18 months of yeast aging result in a lively bead of sophisticated bubbles with a toasted aged complexity. A perfect addition to any brunch or gathering of friends.

Zinfusion has become quite a coveted wine amongst Zin lovers! This Paso Robles Zinfandel is a marriage of our SIP (Sustainability in Practice) and CCOF organic certified Estate grown Zinfandel, Primitivo and Petite Sirah. Each chosen for their unique location and excellent viticulture practices. This wine is dry, yet fruity; with notes of dark fruit, violets, blueberry, plum, and toasted oak.

The Falanghina is from our organically grown Estate Whale Rock Vineyard in the Templeton Gap of Paso Robles. The grape variety originated in southern Italy where it is often served with fresh seafood. Falanghina is a very aromatic wine with floral tropical fruit notes and a hint of minerality. It is medium bodied, dry-yet-fruity, and finishes crisp. This lively and pleasant wine is perfect for hot Paso Robles summer and fall weather. Served chilled.

Our Primitivo is sourced from our Whale Rock vineyard on the west side of Paso Robles and our Blind Faith vineyard from the east side. Primitivo is a clone of Zinfandel imported from Italy, sharing many of Zinfandel's characteristics, but often with a cracked pepper spice. Petite Sirah was blended to add some mouthfeel and overall structure. The Oakenshield wines are produced to celebrate the spirit of the good life to be enjoyed with friends and family both past and present.

The 2022 Castoro Sauvignon Blanc is made with grapes grown in our organically farmed Estate Dos Viñas vineyard; it is highly aromatic and refreshing. What makes this wine unique and so versatile is the play between fruit and a delicate crisp mouthfeel.

The 2021 Castoro Rosé is SIP Certified, CCOF Certified Organic and 100% estate grown. This wine is a light-bodied, crisp, refreshing wine with an alluring rosé' color. Grapes are harvested at reduced sugar content allowing the alcohol to stay low and the acidity to shine.

This Pinot Grigio is from our organically certified Estate Whale Rock Vineyard in the Templeton Gap of Paso Robles. It's always one of the first grapes picked in this vineyard and gives us a glimpse of the harvest to come. This Pinot Grigio is fruity and round, but finishes crisp like the Italian version.
