Palate

In addition to the bright aromatic components, the texture of this little ditty is memory-making, reigning in the lushness, and making you thirst for another sip.

Growing Conditions

Travel just west of Paso Robles, and you will find Paderewski Vineyard: 67 acres of undulating, steep, limestone rich hillsides within 570 rural, spring-fed acres. In the early 1900’s, this vineyard was cherished and farmed by world-renowned pianist, Polish diplomat, and vintner, Ignacy Jan Paderewski. Fast forward a century, and this property stood forgotten and fallow. Lucky for us, in 2004, we became the stewards of this amazing piece of property.

Winemaking

Predominantly Grenache produced from the Spanish clone, Garnacha 52, the 2010 Sensibility was, believe it or not, the sleeper wine from its vintage. Fermented and aged in puncheon, we left this Grenache alone to chill a bit post harvest. After 15 months in barrel, the wine started to come out of its shell and show its true (and oh-so-bright) colors.

Aging

Aged for 18 months in a once-used French oak puncheon
