

Our goal with this wine is always for it to be a balanced wine, with ample, yet not overbearing fruit, nice spice and game notes. Striking but with restraint.

A cool and intricate nose, almost fatty like Pork Rillet, a deep sense of minerality of lime stone, wet stone. Soft citrus notes subdued by the hint of sweetness. There is oyster shell on the palate, saline and pleasantly tannic, woven with the clear dusting of chaparral. There is a real sense of inhaling the fine aromas in an old white wine cellar.

Chenin Blanc is one of those grape varieties that can be difficult to decipher and put into words, Marsanne is similar. They can be a beautiful wine but not obvious or showy. An intriguing nose showing lime blossom intertwined with the dry grasses of summer. There is an alluring thread of serrano fat. Clear minerality. On the palate there is more lime, perhaps Rangpur, some of the bitter touch of citrus pith. The structure is balanced with great acidity and a glimmer of gentle tannin. Long on the palate.

Bailey Ranch Vineyard Adelaida District Cellar Life: 8 – 12 years Fermented in closed tank with pump overs. Pressed to 132-gallon experienced puncheons. Aged 14 months on lees. Bottled. Neil’s Notes: Dress me in leather and throw me in the Brambles.

Romping around on the cedar forest understory, Green peppercorn. Rich deep blackcurrant, a texture of weathered leather, the acidity brings a juiciness that is so luscious and plush. Its dark yet vibrant, long and rich. It’s like reclining in a familiar old leather chair in a cigar lounge, sipping on a cassis with the BBQ readying in the distance. Long and juicy at the last.

Our first rendition of this wine in some years. And what a rendition it is. A nose exploding with soaked dark cherries, menthol, red currants, purple fruit, black fruit, Oh the complexity of this!! The palate continues the show with chocolate covered cherry, dried cherries, sage and milk chocolate. Youthful and bright with pyrazines, white pepper. Spice fruit and a bundle of structure. Pairing: Thick Cut & Dry Aged Porterhouse Steak

Aged 3 years in new French oak puncheon, native yeast, 120 cases produced Cellar Life: 15 + years
