Seven Oxen’s 2018 Grenache contains 100% of the varietal. The organically farmed, estate-grown fruit was harvested from the vineyard’s southernmost slope, which has been dry-farmed since the property was purchased by Seven Oxen in 2011. A rich Grenache with notes of candied fruit, pomegranate, and citrus rind on the nose, and cinnamon, orange zest, and ruby red grapefruit on the palate, balanced with smooth tannins on the finish.

A 100% tannat wine produced from dry-farmed fruit. The Paso Robles climate allows us to push the maturity of the Tannat grape a bit further. This creates riper, softer tannins and beautiful black fruit aromas while still maintaining a bright acidity, resulting in a delicious and approachable single-varietal wine. Seven Oxen’s Tannat is pressed immediately after or sometimes even before fermentation is complete to avoid over-extraction of tannins. Notes of licorice, black currant, blackberry and wet stone.

Cassidy is Seven Oxen’s Rhône blend of 65% dry-farmed Grenache and 35% Mourvèdre, and is one of Seven Oxen’s signature wines. Cassidy is bright and fruit-forward on the nose with notes of strawberry jam, black pepper, leather and roasted meats. Wild strawberries, raspberries and tobacco on the palate with a smooth tannic finish. Destemmed and fermented in open-top fermenters for 15 days, with two punch downs daily for the first week, once daily for the second week. Aged 18 months in neutral French oak.

A barrel select produced from three stand out barrels of 100% Zinfandel fruit. Notes of hibiscus, strawberry, pie crust, and peach preserves.

Two acres of Petite Sirah grow on Seven Oxen Vineyard, and are some of the oldest vines on the property, planted in 2003. The 2017 vintage is the first Seven Oxen Petite Sirah produced, and is made with 100% of the varietal. Our Petite Sirah was destemmed and fermented in open-top fermenters for 15 days, with two punch downs daily for the first week, once daily for the second week. Aged 18 months in neutral French oak. Notes of ground coffee, cinnamon, nutmeg and black currant.

Seven Oxen brandy is produced from our estate grown Zinfandel grapes. This small lot of hand-picked grapes was made into rosé, double distilled by our neighbor, Calwise Spirits Co., and aged for three years in a neutral French oak barrel. Our brandy is soft on the palate with a sweet character and notes of burnt caramel, vanilla, cinnamon, and pear. Only one barrel produced.

Five acres of Seven Oxen Vineyard are devoted to Mourvèdre, and another four acres were planted with the varietal in 2014. Because of our minimalist approach in the winery, Seven Oxen’s Mourvèdre is a true representation of the varietal, made unique by the complex characteristics of the vineyard’s natural environment. This lean, bright wine has well-balanced acidity, with notes of rose petals, black currant, and thyme on the nose. Boysenberry, ripe plum, and blackberry on the palate are balanced with an earthy spicy finish consistent with a true single-varietal Mourvèdre wine.

Ten acres of Seven Oxen Vineyard are planted with Zinfandel. Four of these acres were planted in 2003 and make up the vineyard’s oldest producing block. Zinfandel is a thin-skinned grape, prone to suffering in intense summer heat. However, the varietal is successful on Seven Oxen’s hilltop vineyard due to it’s exposure to cooling afternoon breezes from the windy Templeton Gap. Seven Oxen's Zinfandel is made with 100% estate Zinfandel fruit. Lighter in style than most Zinfandel wine made from Paso Robles fruit, this easy-drinking zin has a clean, bright nose with notes of fig, dates, nutmeg, and cinnamon. Licorice, black pepper, black cherry, strawberry, and raisin on the palate with peach preserve on the finish.
