

Fruit from our estate vineyard is organically grown by co-owner, Josh Beckett. The Grenache and Mourvèdre were handpicked and then loaded, whole cluster, directly into the press. A gentle squeeze of the fruit was intentional in order to avoid the extraction of any harsh or unwanted flavors or tannins. Vibrant & alluring, this rosé showcases organic estate grown fruit. Second Date is 100% Vermentino and made entirely in an Amphora. This Vermentino is a rare grape found in California vineyards and is most commonly grown in France and Italy. We’re pleased to produce this variety right here in Paso Robles. The terroir of the Paso Ono Vineyard coupled with the vinification and aging in clay amphora results in enhanced minerality and salinity in the wine. Second Date 2023 offers a lush palate with notes of lemon, guava, and a subtle hint of slate that lingers in the most pleasant way. This wine offers an ideal balance between fruitiness and refreshing minerality reflective of the terroir in which the fruit was grown. Complex layers of flavor and the wine’s true beauty unfold as this chilled wine warms to room temperature. The smooth, viscous texture is enhanced by a vibrant acidity making it a great complement to many foods. A versatile white wine; while delightful on its own, the acidity in the wine makes it a brilliant food pairing partner. The lush palate and pleasant acid pair nicely with salty seafood dishes like shrimp paella, ceviche or oysters. This white wine is also capable of standing up to more hearty dishes like spicy green curry or herbed lemon chicken with a goat cheese and strawberry salad.

This 100% Syrah fruit originated from the Homestead Vineyard of the Willow Creek District in Paso Robles. Once the grapes were harvested and hand sorted, an extended forty nine days in this carbonic state extracted the utmost in flavor, color and tannin. Typical carbonic fermentations bleed off the juice at the bottom throughout the process. As the weight of the clusters gently pressed themselves, we opted to retain the juices in the bottom of the fermenter to extract more color and flavor. The resulting product is a surprisingly complex carbonic style and this vintage offers greater fruit extraction and beautiful tannins. Wine Enthusiast 91

Carnala is a complete sensory experience in a glass! With enticing aromas of dried cherries, baking spices, tobacco, herbs, plum, cranberries and a hint of oak, every sip is a journey for your senses. The palate is lush and full of plum, black licorice, graphite, white pepper, an assortment of baking spices. The fleshy light tannins enhance the delicate structure of the wine with a lingering finish. 2021 proved to be a remarkable one for winegrowing, providing the ideal climate for producing exquisitely balanced wines with outstanding flavor profiles. In Carnala, all three grape varietals were hand-picked from the steep slopes of the Thibido Vineyard. The fruit benefitted from cool foggy mornings which led to longer hanging time on the vine and extended maturation. This growing season yielded an incredible crop of fruit with ideal acidity and intricate flavors. As a winegrower and winemaker, Josh was overjoyed with the quality of the 2021 fruit and eager to craft these estate wines from the Thibido Vineyard. Carnala was aged in new and neutral French Oak 300-liter barrels for 18 months. To retain the wine’s natural flavor, texture, and aroma it was bottled unfined and unfiltered. The extended, controlled ripening season of 2021 resulted in a wine that exhibits robust flavors, bright acidity, and incredibly complex, sophisticated qualities. The finished blend being 83% Carignan, 10% Syrah, and 7% Mourvèdre. Every sip of Carnala showcases the meticulous care invested in growing and making this handcrafted wine. 93 Wine Enthusiast

The Bedfellow 2022 is a passionate wine born from the unique terroir of the Willow Creek District in Paso Robles AVA. Historically, The Bedfellow has been a Syrah but the 2022 vintage throws tradition aside and blends 60% Syrah, 30% Grenache, and 10% Mourvèdre, all sourced from our CCOF Certified Organic Vineyard. The west-facing, steep slopes of Thibido Vineyard feature Linne, Calodo, and Lockwood soils which impart a distinctive sense of place to the wine. Afternoon coastal breezes and cool nights help to balance intense berry flavor with elegant nuances of earth and flint. Every step of the winemaking process, from the hand harvesting of perfectly ripened clusters to the gentle press and precise aging, reflects our commitment to crafting wines that express the unique story of our land. These three estate grapes showcase a harmonious wine of hearty Syrah enhanced by juicy, vibrant Grenache and a splash of rustic Mourvèdre. The result is a complex wine with a dynamic range of flavors and textures. These limited 50 cases reflect the best of our organic vineyard and Thibido’s style of winemaking.

Hippie Hill 2022 is a wine that embodies the terroir of Thibido Vineyard’s organic soils and the true spirit of our hands-on winemaking process. Crafted from 67% Mourvèdre, 18% Syrah, 13% Grenache, 2% Carignan, this earthy, complex blend draws fruit from our CCOF Certified Organic estate vineyard in Paso Robles’ Willow Creek District. Each grape was carefully harvested over a four-week period, fermented in open-top vessels with native yeasts, and meticulously hand-punched down two times per day. The result is a wine that showcases the essence of the vineyard, from its unique soil profile to the thoughtful, blending and traditional winemaking techniques that have shaped it. Hippie Hill 2022 bursts with aromas of fresh roses, strawberries, and earthy notes of dusty forest floor, sage, and mocha. The gamey, herbal undertones offer a sensory journey through Thibido’s terroir, telling the story of the land in every inhale. On the palate, this wine reveals layers of spiced herbs, gunpowder, and mushroom, balanced by the dark, luscious flavors of black cherry and plum.
