100% Estate Grenache from our Thibido Vineyard. The Grenache vines were trained on a vertical cordon and hand picked at a lower sugar level to retain the natural acidity of the fruit in this beautiful Rosé. The perfect shade of salmon pink with a mouth full of summer strawberries and watermelon. Light acid and medium-bodied, this wine plays well with mild cheeses and grilled veggies.

The color of fresh hay with notes of lime zest and honeydew, this wine turns heads and makes tongues wag. Comprised of 100% Grenache Blanc, the fruit was harvested off La Vista Vineyard in the Adelaida District of Paso Robles. Vinified and aged in a terra cotta amphora, the wine offers citrus and floral notes on the nose. The balance of fruit and acid is just one of the many characteristics attributed to the wine’s integration with the natural clay of the tank. A subtle minerality with a pleasant weight and texture, and a creamy finish are also associated with the use of the amphora. To experience the full flavor profile, enjoy this wine at 55 – 65 degrees, slightly warmer than the average chilled white wine. Wine Enthusiast 92

Thibido WineryJust Because 100% Syrah (carbonic style)

This 100% Syrah fruit originated from the Homestead Vineyard of the Willow Creek District in Paso Robles. Once the grapes were harvested and hand sorted, we transferred them to a fermenter and left them to ferment for ten weeks. Typical carbonic fermentations bleed off the juice at the bottom throughout the process. As the weight of the clusters gently pressed themselves, we opted to retain the juices in the bottom of the fermenter to extract more color and flavor. The resulting product is a surprisingly complex carbonic style and this vintage offers greater fruit extraction and beautiful tannins. James Suckling 90
