Growing Conditions
The grapes used to make these babies come from unique sites farmed sustainably with either Sip certified or biodynamic practices.Our Verdejo is sourced from a One Acre block in the Estrella District AVA in Paso Robles. The vineyard uses organic and biodynamic techniques. The rarity of this variety in the Central Coast as well as the extremely low yield (2 tons) makes it a dream to work with.

Winemaking
The purpose of Ulloa Cellars is to produce exceptional wines loaded with complexity, layers and a little bit of magic. My production techniques consist of using both stainless and neutral oak barrels to add dimension to each wine I make. The wines are fermented with high quality yeast mixed with high-quality loving vibes, stirred every day during fermentation, then aged in their lees for 5-7 months.
