Nose

Known for its depth of character and balancing finesse, this wine possess enticing aromas of cassis, clove and vanilla bean.

Palate

On the pallet, warming flavors of dark fruit, burnt sugar and baking spices mingle with a hint of leather. The wine finishes with full bodied tannins that delicately linger.

Growing Conditions

In 2020, we embarked on a journey in the vineyard; A move toward Regenerative Farming with a concentration on soil health. With that, we applied high quality compost to improve the soil tilth. Cover crops were planted and no herbicides were applied. The 2020 early growing season was near normal. Rainfall occurred mainly in early winter and early spring and seasonal totals were just below average. Vine growth and berry development was typical through spring. Summer brought unusual heatwaves which slowed berry development, keeping them small with a desirable skin to juice ratio. October was warm and dry, aiding in fruit maturity.

Harvest

Harvest was condensed as most Paso Robles Cabernet ripened at the same time with ideal color and flavors.

Winemaking

After harvest, vineyard lots were fermented individually in stainless-steel tanks for 14 to 20 days. Carefully managed pump overs and extended macerations enhanced the extraction of color and tannin.

Aging

The varietals were aged separately for 16 months in French oak barrels, of which 25% were once used and 25% were twice used. The initial blend was assembled in January of 2022 and barrel-aged an additional 3 months in 100% new French oak. The wine was racked only twice during its cellar life, with the final racking occurring just prior to bottling.
