Palate

Powerfully bright upfront that mingles with earthy black fruit and cocoa all shaped around a graceful tannic core. A hint of toasted French Oak frames a classic Cabernet finish that perfectly balances power and freshness.

Growing Conditions

This wine is now a blend of our 3 established blocks of Cabernet on the Estate. The addition of our South-East facing block 17 adds a new element to our Estate Cab bottling adding youthful fruit balanced with more cooler climate herbs and structure. The 2019 vintage kept us on our toes and with the addition of a 3rd block of Cabernet, allowed for an almost blend-like perfection in balance for a single varietal wine.

Winemaking

The fruit was handpicked, and cluster sorted in the winery before de-stemming. The whole berries were moved uncrushed into 4-ton open concrete fermenters. The tanks were pumped over 2 times daily for the first 7 days to create an oxygen-rich environment for the yeast. Once ferment was 70% complete, the routine was changed to twice daily punch downs to keep the cap wet and prolong the fermentation to allow extended maceration.

Aging

After 16 days, the fruit was pressed and racked to barrels, a blend of 20% French Ermitage and 20% French Atlier new oak, with the balance being neutral. After 20 months, the wine was racked out, gently filtered to remove lees, and then bottled.

Appearance

Appears absolutely opaque Magenta in the glass showcasing a good level of extraction.

Food Pairing

In youth will require richer cuts like porterhouse but after laying down for a while should pair with any dish that has even a modicum of weight.
