Palate

Tangerine, Honeycrisp, and decent minerality build an intricate palate that deftly combines acidity and richness. Touches of the barrel and concrete aging help build weight towards the finish that then cleans quickly creating a table-ready wine for summer and fall dinners.

Growing Conditions

The 2021 Lily Blanc comes completely from our neighbor Glenrose. Sitting just across Peachy Canyon Road from our Estate Vineyard, Glenrose contains similar chalky soils and an almost identical climate. This gives these Rhone varietals a perfect ripe profile that is backed by acid necessary for a balanced white. And this is ever-present in 2019, a slightly cooler year that allowed for gradual ripening of white grapes. A vintage like this is a true treasure for lovers of Paso Robles white wines.

Winemaking

Each lot was fed directly into our press upon receival, then underwent a long but gentle 3-hour press cycle. The juice was racked to a tank and cooled for 24 hours to settle out heavy lees. The juice was then racked to a blend of 500L puncheons and 470-gallon concrete eggs and allowed to warm up to start fermenting. After completion of primary fermentation, the lots were combined and aged in concrete egg and French oak puncheons.

Appearance

Presents a pale golden color.
