Palate

The palate is filled with rugged spice, chocolate-covered fruits, wet stone, and lively acidity. The stem inclusion and native ferment provide a gentle chewiness to the tannin as the wine finishes with great length and freshness.

Winemaking

The second coming, and by popular demand, another staple in the lineup is this beautiful expression of Mourvèdre fermented with 60% whole cluster.

Aging

18 months in 45% new, 35% once used, 20% neutral French oak

Look for meats with lots of umami like beef short ribs, pork shoulder, barbeque, lamb, rabbit, pork sausage, and veal.
