On the Central Coast, these varietals thrive in diverse vineyard sites, where warm days promote ripeness and cool evenings preserve acidity, resulting in a wine with both power and finesse. Our 2021 Revelación X, sourced from Jada Vineyard (Paso Robles), Morro View Vineyard (Edna Valley), and Vogelzang Vineyards (Happy Canyon of Santa Barbara), is a bold yet refined red blend with layers of spiced redcurrant, plum, and sandalwood, accented by dried herbs and floral undertones. Aged for 18 months in 90% French oak barrels, this wine balances richness with polished tannins and a long, savory finish. Pairs beautifully with rosemary-crusted lamb, wild mushroom risotto, or aged cheddar.

In Paso Robles, warm days and cool nights mirror the conditions of Spain’s Rioja region, allowing Tempranillo to ripen fully while retaining its structure and elegance. Our Tempranillo Maduro, sourced from Pomar Junction and the rolling hills of the Estrella River Valley’s Plummer Vineyard, is a rich, full-bodied wine with layers of black cherry, dried fig, and cocoa, accented by hints of leather and toasted spice. Aged for 18 months in a mix of new American and French oak barrels, and matured further in bottle before release, this wine meets the aging standards of a Reserva-level Tempranillo in Spain, where classifications are based on time spent in both barrel and bottle. The result is a wine of depth and finesse, with firm tannins and a long, savory finish. Pairs beautifully with grilled pork tenderloin, Spanish chorizo, or a smoky paella.
