Nose
Passion fruit, black cherry, candied lavender, purple flowers, chalk dust, elderberry, and cranberry relish
Palate
Broad, expansive, dark fruit, cherry cobbler, spicy mineral, cola, and licorice. Sweet, floral, and long finish with long grain subtle tannin.
Winemaking
30% whole cluster fermented in small, open-top bins, and spent 15-20 days on skins with pump-overs during cold soak and punch downs during fermentation.
Aging
Aged 16 months in neutral 500-liter puncheons and 4 months in stainless steel prior to bottling
