Nose

The nose has notes of hibiscus and jasmine.

Palate

White tea and guava notes give way to a wild cherry and dried pineapple finish.

Winemaking

We produced the wine using the saignée method. Saignée, translated from the French means "to bleed." Early in the fermentation process, a small portion of each varietal is bled off from the main batch of wine. Since skin contact is relatively minimal and peak alcohol level has not yet developed, the resulting wine is lighter in color and lower in alcohol. We used the same technique for each varietal in the blend, then combined them in just the right proportions to create the very first vintage of Cryptology Saignée. We quite literally bled for you.

Food Pairing

A lovely accompaniment to a romantic dinner. Pair with oysters, poached salmon or lobster. Enjoy a chilled glass with your favorite rom-com. Share a bottle with that one special person who you would bleed for.
