Nose

The nose holds notes of spicy blackberry, plum, mineral, and quince.

Palate

The palate bursts with juicy acidity, and floral and red berry flavors .Complex all the way through, with a vein of bright acid framing the soft tannins and velvety mouthfeel. Finishes long and intriguing. Drink now through 2016.

Winemaking

Many central coast growers produce ultra ripe, high sugar fruit allowing their winemakers to take the “fruit bomb” approach to their Zins. We used a somewhat more nuanced approach to Skull & Bones, in order to showcase the subtle characteristics of our Westside fruit. The result is a restrained, elegant wine that exhibits both complexity and balance. While many Paso Robles zinfandels boast alcohol levels approaching 17%, Skull and Bones clocks in at just 14.5%. An excellent example of why sometimes, less is more.

Aging

This blend aged 18 months in 40% new French and American cooperage.

Food Pairing

While exhibiting classic Zinfandel fruit and pepper notes, this delicate wine will complement most dishes, without overwhelming them. Skull & Bones pairs beautifully with lighter recipes and spicy flavors, but will still hold it's own with heartier fare.
