Nose

The wine opens with aromas of peach and crème fraîche that lead to hints of a light doughy mousse.

Palate

On the palate, notes of tamarind and macadamia are framed by it's crisp acidity and silky mouthfeel.

Bottling

Stainless steel fermented, then riddled and aged in bottle.

Winemaking

100% Sangiovese was picked early with classic Méthode Champenoise in mind. Primary alcoholic fermentation finished at a light 10% ABV. The wine was then put on tirage for refermentation where it aged on the lees, then riddled and disgorged.

Aging

Stainless steel fermented, then riddled and aged in bottle.

Dover sole with a meuniere sauce.
