Nose
Aromatics of plum preserves, licorice, leather, and brownie batter.
Palate
Cuban coffee, violet, Montmorency cherries. Lush supple tannins and a long bright finish.
Winemaking
3-5 day cold soak, followed by pump-overs 3 times a day during fermentation. Pressed into French Oak barrels. 15% whole cluster.
Aging
Aged 18 months.

Enjoy with spaghetti bolognese.
