Nose
Aromatically, the wine lifts from the glass with a heady note of peppercorn on a skirt steak, intermingling spicy and savory in one seamless tone. Sweet tobacco, clove spice, and warm cedar provide earthy tones while blackcurrant sauce and peppery jelly provide a sweeter accompaniment.
Palate
On the palate, the entry is even and layered with a coating tannin structure right away and filled with ripe tones of blackberry, but the midpalate is soft and even in a way that provides restraint around a core of dripping bacon fat umami and blueberry syrup. The structure broadens back out for a coating and mouthwatering finish that carries spicy wasabi and cayenne with it.
Harvest
The Cabernet Sauvignon was harvested on November 7th and the Malbec was harvested on October 23rd, 2018.
Bottling
Bottled in spring of 2020.
Winemaking
The Cabernet Sauvignon was destemmed into a stainless steel tank where it macerated on skins for 19 days before pressing. It was heated throughout its fermentation, and pumped over twice per day for thorough extraction of complex tannin until dryness. The Malbec was destemmed whole berry to bins where it macerated on skins for 13 days and received punchdowns twice per day.
Aging
19 months in 225L French oak barrels, 50% of which was new oak. Racked post malolactic fermentation, and blended and returned to barrel in July of 2019.
