Nose

On the nose, haute aromatics of saline blueberry and reduced cranberry exude sweetness while an underlying tone of slate and stone paint the fruit in more pastel colors. Earthy notes of clove, herb de Provence, and black pepper ground the aromatics while confectionary notes of cinnamon and candied walnuts provide height.

Palate

Flavors of saccharine anise and tart raspberry arrive first on the palate followed by rich boysenberry pie with a buttery and flakey crust. Lean and smelt, the structure of the wine is silky smooth and linear with an extra punch of tannin on the mid-palate that carries a tone of scorched cedar, tobacco, and plum compote through a well-defined and layered finish of winter baking spices.

Harvest

The Cabernet Sauvignon and Malbec were harvested in late October while the Petit Verdot was harvested in early October 2017.

Bottling

Bottled in the spring of 2020.

Winemaking

The Cabernet was destemmed and crushed to stainless steel tank while the Malbec and Petit Verdot fermented whole berry. All varieties macerated on skins 15-20 before pressing and receiving two pumpovers or punchdowns per day. Basket pressed to tank and settled off gross lees before barreling down.

Aging

19 months in 225L French oak barrels, 50% of which was new oak. Racked post malolactic fermentation, and blended and returned to barrel in July of 2019.
