Nose

The 2018 Paladin opens with a beautiful nose of rose petal, red currant, baking spices and wet slate.

Palate

The palate packs flavors of raspberry, cedar, orange peel, cocoa and anise. The finish starts off dense and chewy, yielding elegant tannins on the long seamless finish.

Growing Conditions

100% Estate – Adelaida District, Paso Robles.

Here, exceptional quality fruit is born from a thick layer of limestone-dominent terrain that stretches out in every direction down steep hillsides. With staggering temperature swings of up to 50 degrees that soar and drop daily, and a consistent and daily breeze from the Pacific Ocean, our low-yield fruit is stressed, tried, and tested.

Bottling

August 19th, 2020. Bottled unfined and unfiltered.

Winemaking

Destemmed and cold soaked for 7 days with daily pump-overs. 7-day fermentation with a mix of delestages, pump-overs and punchdowns for cap management. 14-day total maceration.

Aging

Aged for 22 months in 225L barriques: 40% new Hungarian oak, 40% used Hungarian oak, and 20% used French oak.
