To preserve the intense fruit flavors and aromatics of the variety, this Viognier was fermented entirely in stainless steel. Hand-picked in the early morning hours of late August through early September, the cold grapes were pressed immediately after harvest. After settling, the juice underwent a 4-6 week cold fermentation.
