Grenache

The 2021 Grenache has a beautiful clear wide garnet core and rosey edge. The nose on this wine instantly entices you with cherries and strawberries, followed by   potpourri of Rose petals, mandarin orange, and vanilla bean.  Cream cheese on toasted bread round out the flavors.  Once on the palate, the creamy texture of the wine reminds one of a vanilla cheesecake with graham cracker crust covered with cherry coulis with the faint hint of coffee on the finish. This versatile wine can pair with grilled Teriyaki chicken, paella, or mushroom risotto. This delicious goes-with-everything bottle is the perfect bottle to take to a friend’s house for dinner.
 
Winemaking
This light bodied yet intensely flavored Grenache has a bouquet of red fruits and licorice. It expresses beautiful flavors of fresh strawberry, candid cherry and hints of white pepper. Pair this wine with chorizo and date-stuffed pork tenderloin.

A family owned, Certified California Sustainable Vineyard, CASS Winery produces award winning wines expressive of the unique soils and climate of the Geneseo Sub-AVA of Paso Robles, CA. Resting at 900 feet of elevation, the 145-acre vineyard is planted to 13 varieties on a large terrace above the Huer Huero River. Deposited over centuries, the diverse alluvial soils make for an expressive site that produces fruit of incredible quality. CASS shares the experience of the vineyard through each bottle and welcomes visitors in their restaurant and Geneseo Inn.

Gaining in popularity, Roussanne is beginning to be featured more as a single varietal wine. As one of the three main white Rhône varietals, this vintage shows off the crisp and fresh side of the flavor profile.

The nose is enticing, featuring aromas of mesquite embers, savory spice, fruit leather and butter candy.

Rarely seen as a single varietal vintage, this Marsanne shows off the aromatic traits of this white Rhône varietal. 

If you ever wondered which wine from your shipment you should buy a case to cellar, this is the one. As lovely as this youthful full flavored wine is now, it will mature into a stunning showcase wine over the next decade. The relatively mild summer of 2019 allowed a longer “hang time” in the vineyard. This grapes had extra time to develop complex flavors and deep rich color from fully-ripened skins.  The well integrated tannins, high acid, and full body of this wine combine to create the well-named “Reserve” 2019 Vintage.  This is your “Special Occasion” wine.

Deep purple core displays aromas of blueberry and blackberry, cassis, chocolate mint, mushroom, and leather.  

Originally a Bordeaux varietal, Malbec has found a new home and fame in South America.  CASS winery brought the Malbec Clone 9 to Paso Robles and set its roots in the heart of the ancient lakebed that is the CASS Vineyard.  This exciting Malbec has ample amounts of dark berry jam, plum, dried herbs and baking spices all wrapped in an exotic array of pleasing flavors.  You can enjoy this wine with grilled steak and stilton cheese.  For a vegetable option, pair this wine with a tomato cheese tart topped with chimichurri sauce.  Or, just enjoy a glass (or bottle), with a slab of stilton topped with fig jam.  Whichever you choose, you will fall in love with this luscious Malbec!

This luscious aromatic Viognier has enticing floral aromas of jasmine intertwined with pear and white apricot.  The palate is dry and crisp with citrus flavors of lemon curd, grapefruit with a  light banana finish.  This classic representation of Viognier pairs happily with roasted chicken dishes as well as with fried spring rolls dipped in chili sauce. This Viogneir pairs easily with either  herbaceous or spicy dishes.
