Winemaking

A blend of four Rhône-style varietals from hand-selected barrels makes this a Cass favorite. Picked throughout September and October, the grapes were fermented into 5-ton open top fermenters and pumped over multiple times per day to achieve maximum extraction. Aged for 22 months in French oak, Russian Oak and American oak. During the last 12 months of barrel aging, the blending components were aged together in oak. During the first 10 months they were aged separately by variety.
