Winemaking

Destemmed and fermented in closed
top fermentors, with delestage daily
for the first few days of fermentation
followed by open pump-overs two
to three times daily for an average of
12 days.

Aging

Aged 16 months in 100% French oak
barrels, 50% of which were new.

Food Pairing

The palate is fruit driven upon entry, with flavors of raspberry and mulling spices. The mid-palate and finish are firm yet round in
tannin structure, making this wine decisively age-worthy.
