Nose

rich | spicy | complex
Expressive fruit - plums, black currants and elderberries. Peppery and Meaty. Grippy tannins with a long finish. This wine will age in your cellar for 10-15 years.

Growing Conditions

Syrah - White Hawk, Los Alamos Proximity to the Pacific Ocean - cool even growing season.  Nutrient-deficient sandy soils cause the vines to struggle, yielding wines with greater concentration, intense aromatics.


Cabernet Sauvignon - Gateway, Willow Creek  The well-drained, limestone-rich soils challenge the vines to dig deep and work hard to ripen a naturally low crop load.  This in turn creates a perfect expression of classic, restrained yet expressive new world Cabernet. 

Winemaking

Individual lot fermentations. Lots of pumpovers.  10-12 days skin contact. Aged for 17 months in 3 puncheons (500L) and 5 barriques (225L), all French oak, ~27% new. Bottled Unfiltered.

“UMAMI” - Black Truffle Salt, Cumin, Black Pepper, Ginger, Garlic, Onion Powder
