Growing Conditions

Winemaking

Harvested overnight and driven to Paso early in the morning, this fruit was processed straight into a jacketed steel tank and fermented for 12 days on skins.

Aging

Aged in new and used French oak barriques and puncheons (~45% new) for 18 months.
