Palate
Flavors of strawberry, and stone fruits, dominate with fragrant floral notes
of lavender and rose petal.
Winemaking
The Pink is a classic rosé, a blend of Grenache, Syrah and Mourvedre. The Grenache
is chilled for 24 hours on skins, and pressed before fermentation. Grenache juice is
blended with Mourvedre and Syrah saigne after 12 hours of cold soak. Skin contact
will add body, color and flavor giving us a fragrant, floral and fruit forward wine with
a delicate pink hue. The juice is then fermented cold in stainless steel tanks to
maintain its delicate fruit and floral characteristics, then 5 months in neutral French
oak bbls.
