Growing Conditions
Fire Sign brings together the best aspects of the Estate Vineyard and a “no holds
barred” wine making philosophy. Typically low yielding vines are farmed with sustainable agriculture procedures including alternate row tillage, perennial grasses in vine row middles and utilizing mulch produced on site from previous year’s pomace.
Harvest
Winemaking
Fruit is hand harvested, de-stemmed, cold soaked for 48 hours and slowly
macerated in small open top fermenters for approximately 30 days. Classic de le
stage techniques are applied, with controlled oxygenation. The wine is pressed gently
to retain a high ratio of free run.
Aging
Each individual lot is racked into select 100%
new select fine grain French oak and aged for 18 months.
